Chef-Loved KellyBronze Thanksgiving Turkeys are Here for the Holidays
Key to Teodora's rapid success has been its high bar for aligning with responsible local and select farms that deliver consistent quality and practice sustainable agriculture. This fall, the butcher shop is taking its mantra one step further. It is the only Massachusetts butchery to offer customers KellyBronze turkeys from Virginia. The holiday birds are the "Rolls Royce" of Thanksgiving turkey and revered for their succulent flavor and moist taste. Fans include Chefs Gordon Ramsay, Nigella Lawson, and Martha Stewart. The free-to-run, bred to be wild turkeys are direct descendants of the very first birds brought to England in the 1500s. They are grown to full size, dry-aged, hand-plucked, and cook in two hours with no brining. The KellyBronze comes in two sizes: Small (10-14 lbs.) and Medium (15-19 lbs.). Expanded Offerings
As the shop has grown, so have its offerings of custom-cut and grab-and-go tenderloins, prime steaks, pork chops, bone-in ribs, hand-ground burgers, and marinated chickens. For weekend fall and winter travelers, the shop plans to offer heat and serve Teodora Boxes that serve 4 persons and have a delectable protein and vegetable. Beyond meats, the gourmet section now boasts racks of delicious pairings including Zaccagni pasta, Ferrarini Italian butter, Galateo & Friends oil, BBQ Paradise from 2x-Michelin star Chef Mammoliti, Maldon Sea Salt and Masseria Dauna tomato sauce. Education Classes
"A key driver for me is preserving the art of butchery and remaining close to my family's roots and work ethic," said Teodoro. "I'm excited to educate customers about farming and offer a variety of classes that capture my love of cooking and home decor."
The first class kicks off Sunday, October 13 at 9:00 AM and is a Pork Breakdown that will teach attendees how to transform a whole pig into various cuts and dishes. Taught by Dr. Jonathan Campbell, Associate Professor and Extension Meat Specialist at Penn State University, attendees will learn new skills and gain a deep understanding of pork butchery and the pork farm industry.
